INGREDIENTS

for 6 people

For pasta
1 kg of flour 00 (double zero)
30 g of brewer’s yeast (dry yeast works as well)
500 ml of water
10 g of salt
10 g of granulated sugar

For the dressing
80 ml of extra virgin olive oil
100 g of buffalo mozzarella
basil leaves
200 g of Italian Parma Ham
400 g of peeled tomatoes
salt to taste

PREPARATION:

Step 1
On a wooden or marble surface, arrange the flour in a heap with the yeast, salt and warm water in the center, being careful not to let the salt and yeast come into direct contact.

Step 2
Work the dough vigorously for about 15 minutes with your hands or, alternatively in the planetary mixer, until the mixture is soft and homogeneous.

Step 3
Once you have obtained the right consistency, possibly adding a little water or a little flour, shape the dough giving it the shape of a ball, cover it with a plastic bowl so that it does not come into direct contact with the air , and let it rise for 3 or 4 hours at room temperature or for about an hour in a warm place.

Step 4
Once the dough has doubled in volume, obtain 6 loaves, shape them into spherical shapes, cover them with a sheet of cling film and let them rise at room temperature for a couple of hours or in a warm environment for about 45 minutes.

Step 5
When the loaves have also doubled in volume, prepare the tomato pulp by pouring it into a bowl and seasoning it with a pinch of salt and 1/3 of the olive oil.

Step 6
Then work the loaves flattening them, one at a time, with your fingers until you get quite thin discs.

Step 7
Then spread the pizza with sufficient quantity of tomato with a ladle or spoon, garnish with a few basil leaves and cook in a preheated oven at about 250 ° C for 5 or 6 minutes. Mean while slice the Bufalo cheese into cubes and prepare the raw ham.

Step 8
Once ready, take the pizza out of the oven, add the Bufalo cheese and Parma ham and garnish further with basil and a drizzle of raw oil and serve immediately.

About: Il Bolognese had opened about 10 years ago and done okay, but six years ago Andrea Bernardi had appeared on the scene, fresh from Bacco Italian restaurant, and rebooted the place. Nowadays, Il Bolognese is one of the most popular Italian eateries in town, and it is packed most nights. This is not through any high-profile marketing campaign, but simply good old-fashioned word of mouth. Many of the regulars are locals from around the Sathorn districts. The food served is that ofEmilia-Romagna, the administrative region in northeast Italy whose capital is Bologna, from where the restaurant’s owner hails; Andrea himself is from Rimini, which is in the same region.

Decor: Soi 7 is a narrow little lane that runs almost unnoticed between the Singapore Embassy and the Asia Centre; walk along here a couple of minutes, and behind some trees is the restaurant, set in a delightful house painted an almost edible pink. In the garden are a number of tables, and a huge red garden bench. Inside, to the right, is the pizza oven, hived off behind a counter and manned by chefs armed with pizza shovels. The wood-fired oven was designed and built in situ by famed chef and oven designer Mario, who has his own restaurant in Phuket. What immediately impresses the visitor, having passed through the already busy garden tables, is the cosy buzz within the restaurant: pretty well every table is taken within both rooms, for a glass wall runs down the centre. The atmosphere is very welcoming, enhanced by the friendly Andrea himself, and thoroughly attractive and attentive young wait staff.
